Corned Beef and Cabbage



  1. Cover meat with plenty of water

  2. Add onion, garlic and mustard

  3. Bring to a full boil

  4. Simmer 1 hour per pound

  5. If broth becomes salty, add 4 or 5 quartered potatoes in the last hour

  6. Add cabbage to broth and meat for the last 15 minutes

  7. Remove meat, let it rest for 15 minutes

  8. Slice into 1/4 inch slabs (against the grain)

  9. Place slices into bowl, top with broth and cabbage
