Halibut with Artichoke Hearts and Saffron Broth



  1. Season both sides of fish with salt and pepper

  2. Heat oil in a large skillet over medium-high heat

  3. Add fish, cook about 2 minutes per side (less for thin fillets) or until golden brown

  4. Remove fish from pan, set aside

  5. To the same pan, add artichoke hearts, broth and saffron, bring to a simmer

  6. Return fish to pan and simmer 2 minutes (or until fish is fork-tender)
